is the cookbook from danny boylen, chef and owner of DC's premier personal chef service, Cogito Ergo Sauté. It is a long-simmering project finally brought to fruition by the quarantimes. The recipes are largely originals with a handful of “classics” that have been modified in such a manner that they demand inclusion.
An (in)Appropriate Amount of Butter also features guest recipes from CE Sauté's pastry chef and baker of sublime cupcakes, Kat Schroeder, and former chef and dear friend, James Sullivan.
